This is one of my favorite healthy snacks!
Buckwheat Muffins
This vegatarin recipe is fabulous because it is sugar, gluten free and is also low in calories. Sounds gross right? fortunately these little muffins are tasty, healthy and extremely quick and easy to make! I added a cup of fresh blueberries to my recipe (as seen in photo)

- !14 cup flax seeds (ground)
- 34 cup buckwheat flour1 tsp baking powder
- 1 tsp cinnamon
- 12 cup almond, soy or rice milk
- 2 pears (peeled then grated)
- 3 tbsps coconut oil (melted)
- 12 cup chopped walnuts
- 3 tbsps coconut oil
- 1 tbsp raw honey
-Mix the dry ingredients together in a bowl
-In another bowl mix together the Almond milk, pears, and melted coconut oil
-Slowly mix the liquid ingredients with the dry
-Add chopped up Walnuts
-preheat oven to 350 degrees and bake for 25
minutes
-Served with melted raw honey
